Raised in the picturesque village of Elora, Ontario, Florence transformed a historic 1848 limestone building into her secluded sanctuary, investing millions to restore it to flawless perfection. “I approach space the way I approach a rare gemstone,” she explains. “Its history and material tell you what it wants to become. This month, the hotel officially debuted its private, guest-exclusive Nordic-inspired wellness spa—a hidden outdoor oasis just steps from every suite. Nestled within a serene garden, the spa features a handcrafted cedar sauna, an open-air hot tub, a restorative cold plunge circuit for contrast therapy, and a fireside lounge—all complemented by on-demand beverage and snack service. Rustic yet refined, and perfectly scaled, the spa is a sensory embodiment of Florence’s design ethos: purity, balance, and masterful craftsmanship.

Building on its already acclaimed daily 60-minute in-suite full-body massage (performed by in-house therapists), the hotel is now elevating this ritual with Florence’s personal favorite skincare. Starting in January, each massage concludes with a La Mer Luminous Infusing Essence Oil facial, neck, and décolleté ceremony—featuring a 30ml mini bottle of the luxury elixir (retail value: $395 USD). The treatment is further enhanced with sound bath therapy and Nordic-inspired thermal rituals, including alternating hot and cold towel compresses to awaken the senses and harmonize body temperature, inviting guests into deep presence.

To enrich its sensory and culinary offerings, the hotel will also launch an unlimited dessert atelier on December 18—exclusively for guests. Helmed by Chef Marc Collyer, this edible art experience features daily-changing creations crafted with the world’s most expensive ingredients. Guests can anticipate delights such as “homemade caramel mille-feuille with green apple caviar and hazelnut cream” or “caramel white chocolate éclair with Amarena cherry mousse and candied orange champagne dust.” The signature croissants—fermented for three full days for unparalleled depth of flavor—are a house hallmark. Before joining Kat Florence, Chef Collyer spent 14 years refining his craft at Manor House, a Michelin two-star restaurant in England’s Cotswolds. Now, in this secluded haven, he redefines pastry as intimate, artistic, and effortlessly luxurious. All desserts, cakes, and chocolates are complimentary and unlimited during a stay.

Each morning, Chef Collyer hand-churns butter and bakes fresh pastries and breads, which are delivered to every suite as part of the hotel’s bespoke breakfast service by a private butler.

In keeping with Florence’s renowned eye for rarity and refinement, the hotel maintains deliberate exclusivity—hosting no more than 14 guests at a time and offering an unprecedented 2:1 staff-to-guest ratio (among the highest in North America; the luxury average is around 10:1).
